How to leave Wix without losing your domain or email
Short answer: you do not have to cancel first, and you do not have to move your domain. Build the replacement, point your www address to it, leave your email records alone, then cancel the Wix premium plan.
Why you rebuild instead of export
Wix says its sites must run on Wix's servers and cannot be hosted elsewhere. Your words, photos, and business details are still yours; the working site is what stays behind. Wix help center

Keep your Wix site running for now

Keep your domain where it is

Leave your email records alone
Business email runs on separate records (called MX records). The switch only changes the website record, so your inbox keeps working.
Check the new site on your own address
Open your www address and confirm the new site, your phone number, and your contact form work. Only then move on.
Cancel the Wix premium plan
Pointing your domain does not cancel your Wix plan, so cancel the premium plan yourself once the new site is live. If your domain is registered with Wix, keep that registration; it renews separately, usually yearly.
One Wix-specific note
Wix does not let you change the name servers of a domain bought from Wix. You do not need to: the switch only edits the website record, and your email records stay as they are. Wix help center
